A few years ago, we embarked on a journey to share the authentic flavors of the Middle East with the vibrant community in Los Angeles. Inspired by Beirut's rich culinary traditions, we envisioned a brand that would honor these roots while catering to modern tastes. That’s how Bay and Roots was born. Our mission is to share the simple, wholesome ingredients that make up the Mediterranean diet and show how they bring vibrant flavors to every dish. Through our pop-ups featuring shawarmas, flatbreads, spice blends, and savory creations, we bring a little piece of Beirut to every dish we serve. Currently, we want to introduce products like za'atar, dried mint, and other spice blends, inspiring others to bring these vibrant flavors into their own kitchens.

Hester produces fresh, organic produce from local farmers in New York. Even our spices are fresh. Just because pickling is a preservation process doesn’t mean you can use dried-up thyme or week-old asparagus that’s already a little spongy.
We want to give our customers crisp, crunchy and delicious pickled vegetables and fruits. Most of all, we want to expand people’s palates and prove that pickles don’t always come in a green or red variety.
